Quinoa and veggie stuffed peppers

I know I’ve done a poor job of giving updates on my #tfgbridal plan, but if you follow me on Instagram, you at least get more updates.

I’m skipping around a lot, and I still owe you all a post about the food at my Bachelorette party. And the juicing afterwards. But for now, I wanted you all to see what I made for dinner last night.

DSC02517Some recipes I try are great. Some not so much. This was a winner.

Kale, zucchini, quinoa & black bean stuffed peppers.

Ingredients:

  • 1-2 handfuls baby kale (or regular. just be sure to not include stem)
  • 2 bell peppers (cut lengthwise in half)
  • 1 small zucchini (diced)
  • 1 can black beans
  • 1 cup cooked quinoa
  • 1 TB olive oil
  • 1/4 cup vegetable broth
  • 1 tsp finely chopped garlic
  • 1/3 cup plain Greek Yogurt
  • 1/2 cup shredded cheese of your choice
  • salt + pepper + paprika

Heat oven to 400F. Line cookie sheet with foil, place 4 bell pepper halves on sheet. In a large pan, add olive oil, sautee zucchini until soft. Add kale. Let wilt. Stir. Stir in broth and garlic. Cook for 1-2 mins. Remove from heat. Stir in quinoa, Greek yogurt, black beans. Season with salt, pepper and paprika. Spoon mixture into pepper halves. Be generous! Sprinkle cheese on top. Bake for about 25 minutes or until peppers are soft. Voilá!

Dessert was homemade almond butter. Didn’t realize making almond butter is so easy. Add almonds to blender, blend at low speed, be patient. And you’ve got almond butter! Nothing added! I will never buy almond butter again!

As far as the bridal plan goes, my workouts have been as follows:

Monday: 1 hour vinyasa yoga

Tuesday: 2 mi run, .5 mi walk

Wednesday: will be 1 hour vinyasa yoga

I have been pretty good, but it’s hard to be perfect! I will say I got a craving for Swedish Fish last night…and satisfied that craving. Does anyone else get weird candy cravings?

#TFGBridalPlan breakfast and snack ideas

If you haven’t seen my bridal eating and sweating plan, check it out here before going any further. To continue the #tfgbridalplan series, I present you with a few breakfast and/or snack ideas.

This particular bowl was enjoyed as a breakfast. Plain non-fat Fagé Greek yogurt, drizzle of honey, fresh strawberrries and Kind granola. Strawberry season is finally here. Favorite time of year!

Enjoyed while watching the live streaming of the George W. Bush library dedication at my alma mater, Southern Methodist University. It was such a moving dedication, with all 5 living presidents and first ladies up on stage at my school. So cool.

Next up is a snack idea. Can be breakfast too. During my bridal plan, I’ve tried to reach for something healthier than tortilla chips + salsa or trail mix or just…chocolate. To tide me over until dinner (and to avoid overeating at dinner), I whipped up a little strawberry banana protein smoothie.

Into the Vitamix went:

1 cup frozen strawberries

1/2 banana

1 scoop Juice Plus vanilla Complete (plant based protein powder)

Coconut water (enough to get things moving)

Smoothies have been my go-to snack and breakfast for the past few weeks…and I almost always include a few handfuls of kale/spinach. But I wanted something pink this time :)

As far as my bridal plan goes, let me tell you I have not been perfect. I had Chick fil A for lunch yesterday and pizza the night before. As I’ve said before, it’s all about the balance. Eat an awesome salad, drink a green smoothie and stay healthy when you can. Sometimes a Friday night just calls for a pepperoni pizza and I have to be ok with that.

Workouts this week went as follows:

Monday: ran 4 miles, walked 1

Tuesday: in-home dance workout (YouTube–thanks for the idea, Steph) + upper arm free weight workout

Wednesday: 1 hour vinyasa yoga

Thursday: rest

Friday: 1 hour vinyasa yoga

Saturday: 1 hour brisk walk

This week I will be aiming to go to yoga more often, but I am leaving first thing Friday morning for my Bachelorette party! Can’t wait! Stay tuned for more meal ideas sticking with my #tfgbridalplan!

Healthy Smoothie Breakfasts

Hi guys,

Before I get to the smoothie, I want to say my heart is feeling heavy this morning. My heart goes out to anyone and everyone involved in the Boston bombings that happened yesterday afternoon. When you hear “Pray for Boston,” remember to actually take a moment and say a quick prayer for all who have been affected by this horrific event.

That being said, I want to move on to a healthy breakfast idea. A tropical green smoothie!

DSC01832You can really make several variations of green smoothies, but lately, this has been my favorite combination. Full of plant-based protein (Juice Plus Complete), potassium, iron and probiotics. And it’s a salad in a smoothie!

2 handfuls baby spinach

3 Tb plain Greek yogurt

1.5-2 cups frozen mango (or fruit of your choice)

1 scoop Juice Plus Complete (protein powder)

Coconut Water (enough to get things moving)

Next up is the bridal eating and exercising plan! I’m less than 8 weeks away, and I have a plan even non-brides will want to follow! Be on the lookout for it!

Mondays can be really dull, so I thought I’d share some photos and a few words about my weekend. This past weekend was full of rest and relaxation, cooking, food and watching movies with my fiance.

Fall time breakfast and Southpaw’s

Good afternoon everyone! I got out of bed too late today and decided to roll with it and make myself a leisurely fall time version of my favorite breakfast.

I used my (on the verge of death) banana and smashed it into my usual waffle mix and topped it with plain Greek yogurt, chia seeds, peanut butter, chopped apples and a drizzle of maple syrup. If you want to be full for 4 hours+, this is the way to go. It was so delicious with chopped apples. I got to dip them in Greek yogurt and PB. All in one dish. So tasty. It’s a fall time waffle because I substituted apples for berries.

An hour later, still full, I headed to the gym and did 30 mins on the elliptical. It got super boring and actually feels more challenging than a long run. Good thing this played on my Spotify radio:

You bet I got back to work as soon as the Backstreet Boys began singing to me.

After a shower and some work at home, I went to meet Ryan at Southpaw’s organic grill.

It was really sunny and we’re patio eaters no matter the time of year. I got the chicken and tabbouleh wrap. I thought there wasn’t any chicken in there since it said it was rotisserie chicken on the  menu, but it’s more of a deli chicken. Look closely, it’s right up next to the tortilla. Yep, we brought it back and asked for chicken and found there is in fact chicken in there. I was excited for rotisserie chicken…a  bit misleading.

It was so fresh and clean though. <–I wrote that without meaning to rap. Sides were watermelon and orange slices. I love that we have this lunch place for another healthy option! Ryan had a turkey sandwich and we shared a coconut milk berry smoothie. Mmmm.

This was a snack last night. Half an apple smothered in almond butter. Never gets old. I ate the other part of the apple shortly after.

Lazy Sundays

Happy Lazy Sunday everyone!

Sunday is my favorite day of the week. A day with absolutely no expectations. A day to worship God. A day to sleep in. A day to snuggle with your loved ones (this includes pups!). A day to make waffles and sip on coffee. A day to do nothing. A day to be productive. Whatever your Sunday includes, be sure to soak it up!

Just in case you’re wondering, this Sunday (as in today) I slept in way past breakfast and got to enjoy lunch with my fiance.

This waffle was enjoyed Friday morning right here at my desk. Sometimes making waffles during the week makes your entire day feel special. This waffle was made with a mix plus a scoop of Juice Plus Complete for extra staying power, topped with a dollop of plain Voskos Greek yogurt and sprinkled with chia seeds. Berries on the side. Dab of PB on the side for good measure. This had me full for hours.

Before I show you what was in my little shopping cart at Whole Foods, you must watch this video.

Ok, now that you’ve been enlightened, you will never look at the WF parking lot the same way.

I am very interested in what people buy at the grocery store. Even the checkout lady will ask me what I’m going to make with certain ingredients. I think it’d be interesting to see what everyone buys. So here’s my latest shopping load full of summer staples.

Yes this is for ONE girl. It’ll last me about a week if I cook every meal at home. From the left we have my produce. Summer produce is the best. Bananas (huge), nectarines, strawberries, blueberries, spinach, sweet potatoes, Texas heirloom tomatoes, avocado and zucchini. I find that when I fill my fridge with the good stuff, I only eat fresh produce.

Continuing, we have chicken and turkey, and these whole grain sandwich thins that make things a whole lot easier.

I ended up making a sandwich right after I got home, but we’ll get to that in a bit.

Moving across my WF loot, I also picked up some plain Voskos. My favorite Greek yogurt for delicious berry and oat bowls in the morning. A dozen eggs because eggs are great on just about everything, cranberry juice and coco water.

And my packaged items. I love this Near East couscous, so I decided to get the WF brand lemon & herb flavored as well. I love treating it like rice and adding grilled veggies and sometimes an egg too. And the Stubb’s BBQ sauce, honey pecan. I’ve never tried this kind, but I can’t wait to marinate and grill chicken with it.

Finally, my favorite almond butter. Mmmm.

After leaving WF hungrier than ever, I put together this little (big) lunch:

Fresh produce special of the day. Turkey, spinach, heirloom tomato, avocado. Side of fresh nectarine slices. It was heavenly.

There’s nothing quite like fresh avocado.

What would you make with all those groceries? Today’s lunch was a HUGE salad.

A new summer favorite: grilled peaches

Good evening, foodie people!

I have been thinking about this dish ever since my friend and I made it a few nights ago. Meet grilled peaches.

We didn’t exactly get those pretty grill lines, but it tasted just like peach cobbler. Minus the unnecessary sugar and calories. Grilled peaches + plain Voskos Greek yogurt + oats + drizzle of honey. So. Good.

Besides new dessert creations, I have been eating everything in sight. This lunch plate proves I couldn’t make up my mind.

Allow me to take you on a tour.

This is a veggie masala pattie (bought it in the frozen section of WF) and my favorite summer veggies– sautéed zucchini and bell pepper.

On the other side of my plate are baby carrots, lentil crackers and a gouda Baby Bell cheese. The cheese is so good. And you know I try to avoid cheese….until I met these little guys.

On another note, this is how my mornings begin. The joys of working from home.

Thanks to my recent trip to WF, I got to jam pack my morning with fresh produce. The best way to start the day. Under that pile of berries is plain Greek yogurt. On the right is a slice of Seeduction bread toasted with Justin’s PB and bananas.

Shake Shack, Fig and Olive and Campbell Apartment

Well, I’m back in Dallas now and I’m feeling a bit reminiscent about this past weekend. I had an amazing time seeing friends I hadn’t seen in a long time, spending time with Ryan and eating amazing food. There’s just something about NYC. I will be back soon.

So looking back, Saturday was all about getting to Shake Shack. Ryan and I walked an hour to get there, but it was worth it. The walk through Central Park was nice too. We waited in line for about 25 minutes, Ryan waited for the food to come out, and I stood in a line to get a table. Insanity. I’ve never seen this Upper West Side location so busy. We ate way too much food.

After that, we spent the afternoon lounging and watching the Olympics (my favorite). Once we felt like it was time to eat again, we decided on Fig & Olive.

I loved the pretty interior, and that evening it had rained, so it was a perfectly cool temperature, windows open and all. Since we weren’t starving, we shared 3 small plates. I love that Ryan and I share a love for trying dishes and getting little tastes of everything.

Please excuse the crappy iPhone photos, but this is going to have to do. We started with all 3 plates at the same time which I found to be a little rushed, but here’s dish #1. It’s their melon & prosciutto burrata salad. It was all my favorite things on one dish. Arugula, a bit of pesto, burrata, cantaloupe & prosciutto.

These are their Mediterranean chicken samosas with chicken, cilantro, Greek yogurt, bell pepper, scallion and olive oil. They were really good.

Finally, we shared a plate of 3 crostinis. From the top, [prosciutto, ricotta, fig, olive, walnut], [manchego, fig, marcona almond], and [burrata, tomato, herbs, balsamic]. These were just alright. Ryan commented that they didn’t exactly get their sweet to salty rations quite right. Some were too sweet, some just too bland.

After dinner, we set off in the rain to Grand Central Station.

I just couldn’t help but to look up in awe. I hadn’t been inside before! But we were on a mission to find Campbell Apartment. Thanks to everyone who tweeted me to suggest this amazing bar.

It actually was the office/salon of John W. Campbell of the 1920′s. It’s got that prohibition era feel with live jazz music and all and is located inside Grand Central Station (enter on opposite side of Ciprianis). Ryan and I fell in love with the place and spent a good amount of time just sitting and talking over our delicious cocktails.

I’m already missing that colorful city. Here’s to a trip back to NYC in my future!

A perfect Saturday morning treat

You know it’s going to be a good weekend when your Saturday morning begins like this. At 11am. Sun is shining, coffee is brewing, and it’s time for waffles and a side of peanut butter of course.

Please excuse the missing bites out of this waffle..I was hungry. I was missing the maple syrup (new apartment…oops!), so I made my own healthier version of a sweet beginning. Waffle + plain Greek yogurt + blueberries + drizzle of honey. Oh and an occasional dip in the PB jar. It was so good and kept me full.
