Second Bar and Kitchen, Austin

DSC01636Good afternoon, everyone! It’s Friday! Cheers to that.

What: Second Bar & Kitchen

Where: Austin, Texas

A few days after Christmas, we set out for a fun dining experience with great food. Second Bar & Kitchen was our destination. Nestled in the hip 2nd Street area, Second boasts an open, fun and cozy atmosphere perfect for groups or even dates too. They have an outside deck as well as an upstairs deck. Plenty of cool spaces to dine!

DSC01633We started out with drinks. They have a list of very eclectic cocktails, but we stuck with the basics. Glass of Malbec for me, Jameson Special Reserve for the twin brother.

DSC01635My fiance and I both ordered what happened to be their vegan dish at the moment. Their soba noodles and sprouts with roasted mushroom, sesame, avocado, almond and orange bits. I was worried the dish would be too citrusy and not savory enough, but with the warm soba noodles and the almonds, this dish was savory, fresh and light. It filled me up in the best way possible. I highly recommend this dish even if you’re not vegetarian or vegan.

DSC01634This is their pizza bianco. It comes with ricotta, goat cheese, wild arugula and grana padano. My twin brother gave it very high marks.

DSC01628On the side we had the black truffle pomme frites with truffle aioli on the side. Can’t go wrong with these! These fries are the perfect texture and thickness, and if you’re anything like me, you drool at the mere scent of truffle.

DSC01637After we were all full, we realized we had completely neglected this awesome side dish. Their brussels sprouts with smoked bacon, mint and feta. Cooked to perfection, warm, comforting goodness. Even if you hate brussels sprouts, you’ll love this dish.

I’ve never stayed for dessert, but here are a few I would love to try: pumpkin cheesecake in a jar, sweet potato fried pie, chocolate pudding pot….I could keep going, but I’ll spare you all.

Bottom line is, when you’re in Austin, or if you live in Austin and haven’t gone, go. Second always does an awesome job with high quality food, innovative dishes and they always use produce that is in season.

Our Christmas Eve

Hi everyone! I wish I had more time to blog, but my excuse this time is that I was spending quality time with my family. And I had my fiancé here with us for our first Christmas together!

Let’s start with Christmas Eve.

DSC01545We spent the day running errands, last minute wrapping and baking, etc. We headed to church for the 5pm service and got back in time for a glass of champagne before dinner. The gifts began to multiply under the tree as the night went on.

DSC01548My sister and me after church on Christmas Eve. Please note the leaning angel…

This year I cooked Christmas Eve dinner, minus the turkey. My dad prepared the turkey. And I made sure to snap a photo of each dish.

DSC01583Side dishes included roasted asparagus,

DSC01560roasted sweet potatoes and onions,

DSC01558roasted brussels (are you starting to see a pattern?)

DSC01559quinoa broccoli bake,

DSC01579and a side salad of arugula, cucumber, honeycrisp apple & sliced almonds with balsamic.

DSC01561All in all, it was a pretty tasty meal. I decided to keep it mostly healthy this year with lots of vegetables and greens. Next time, I think I can try out some new recipes and get a little more creative. But for the time I spent, I’d say this meal turned out pretty well.

Do you eat out for Christmas Eve or cook at home?

roasted brussels sprouts, fried egg and chocolate cake

Step 1: Slice brussels sprouts in half, place on baking sheet, drizzle coconut oil, salt & pepper. Roast for 10 mins on 400 degrees, flipping over half way through.

Step 2: Fry 1 egg, place over brussels, poke yolk to let the egg run.

There you have it! Roasted brussels sprouts with fried egg and the natural egg yolk sauce. For some of you, you may be repulsed. But for other egg lovers out there–you know this is the good stuff.

I had seen this particular dish on food blogs and fit blogs and I knew I had to try it. It was filling and nutritious. My other dish last night was a baked sweet potato topped with plain Greek yogurt and a dusting of cinnamon. I usually roast my sweet potatoes and dip them in ketchup, so I thought this would be a new fun way to enjoy sweet potatoes. For some reason, this way was much too sweet for me, I could only take a few bites, then threw the rest out. BUMMER.

So it was dessert time. I made a 3 min chocolate cake in a mug!

I found this recipe in an US magazine while getting my toes done. I would have cooked this in the microwave for only 2 minutes as this ended up being too dry.

Have you ever made a chocolate cake for 1?

Juice Plus NMD

Happy Sunday everyone!

First of all, life has been a whirl. My brain has been all over the place and I actually went to Phoenix for about 18 hours in order to stand up there on the stage to support my awesome mother. She made it to National Marketing Director for Juice Plus, the highest position you can achieve. She’s worked at it for 6 years and she truly deserves it. She made a speech to over 5,000 people and rocked it. If you want more info on how to become a distributor for Juice Plus or just want to know what JP+ is, click here. I couldn’t recommend the product more, and you can buy from ME!

This is a shot from my Southwest flight back to Dallas. Beautiful evening.

And now for the food:

Drooling yet? It was so good. And 2 servings of vegetables to boot. This afternoon was a lovely day to stay in and cook. Ryan cooked our burgers–extra lean turkey with rosemary & garlic for me, ground beef for him. On the side are sweet potato fries (let me know if you want the recipe) and halved brussels sprouts roasted in the oven with coconut oil, sea salt and pepper. The brussels sprouts tasted heavenly with the hint of coconut. You must try it. (p.s. did anyone else know you spell brussels sprouts like that? Is it just me or did anyone else think Brussels was singular?)

Hope everyone else is enjoying their Sunday and has a lovely week. One thing I learned by zipping over to Phoenix was traveling to a different city is so invigorating. Wish I had the time and money to head to a new city every weekend. Maybe one day.

Bon appétit,
