#TFGBridalPlan breakfast and snack ideas

If you haven’t seen my bridal eating and sweating plan, check it out here before going any further. To continue the #tfgbridalplan series, I present you with a few breakfast and/or snack ideas.

This particular bowl was enjoyed as a breakfast. Plain non-fat Fagé Greek yogurt, drizzle of honey, fresh strawberrries and Kind granola. Strawberry season is finally here. Favorite time of year!

Enjoyed while watching the live streaming of the George W. Bush library dedication at my alma mater, Southern Methodist University. It was such a moving dedication, with all 5 living presidents and first ladies up on stage at my school. So cool.

Next up is a snack idea. Can be breakfast too. During my bridal plan, I’ve tried to reach for something healthier than tortilla chips + salsa or trail mix or just…chocolate. To tide me over until dinner (and to avoid overeating at dinner), I whipped up a little strawberry banana protein smoothie.

Into the Vitamix went:

1 cup frozen strawberries

1/2 banana

1 scoop Juice Plus vanilla Complete (plant based protein powder)

Coconut water (enough to get things moving)

Smoothies have been my go-to snack and breakfast for the past few weeks…and I almost always include a few handfuls of kale/spinach. But I wanted something pink this time :)

As far as my bridal plan goes, let me tell you I have not been perfect. I had Chick fil A for lunch yesterday and pizza the night before. As I’ve said before, it’s all about the balance. Eat an awesome salad, drink a green smoothie and stay healthy when you can. Sometimes a Friday night just calls for a pepperoni pizza and I have to be ok with that.

Workouts this week went as follows:

Monday: ran 4 miles, walked 1

Tuesday: in-home dance workout (YouTube–thanks for the idea, Steph) + upper arm free weight workout

Wednesday: 1 hour vinyasa yoga

Thursday: rest

Friday: 1 hour vinyasa yoga

Saturday: 1 hour brisk walk

This week I will be aiming to go to yoga more often, but I am leaving first thing Friday morning for my Bachelorette party! Can’t wait! Stay tuned for more meal ideas sticking with my #tfgbridalplan!

My bridal plan

Bridal PlanHi everyone! Finally, the Bridal Plan is here! I will be sharing fun breakfast, lunch, dinner and snack ideas between now and my wedding day! I am about 7 weeks out now, so I have already started the plan.

Follow along Twitter and Instagram with me (@thatfoodiegrl) and use the hashtag #tfgbridalplan. Whether you’re a bride or not, feel free to participate! I’d love to hear how my plan works for you!

One thing I will say is my idea of health is balance. I allow  myself to have a piece of dark chocolate each night, but dessert stops there. I also allow 1 dessert a week in the 8 week out time period.

This plan is designed to get toned and lose a few pounds, not to drop 10-20 pounds in 8 weeks.

Homemade vegetable quiche

Hey everyone! Hope you all had a great Easter.

Mine was different because I ended up sleeping through the church service I was supposed to go to with my aunt and uncle. Because of my oversleeping mishap, I ended up attending my church by myself. It felt strange, but I’m glad I got to celebrate Easter where I felt was most important. (my fiancé is out of town, too)

After church, I decided it was time to make brunch. Brunch for 1, please. Ok, just to let you know, Easter wasn’t all loneliness. I met up with family later in the afternoon for an Easter get together complete with little babies Easter egg hunting!

This was my very first quiche and I am very proud of it. I loosely followed this recipe, but ended up with my own version.

I used my new KitchenAid mixer (my pride and joy) to make the dough for the pie crust (use a mixer if you have one!).

Be sure to use your paddle, not whisk.

Instead of pastry flour, I used 1/2 cup brown rice flour, 1/2 cup cake flour. I just didn’t have pastry flour on hand and this turned out beautifully.

When blending, be patient. It might look dry, but add tablespoons of cold water one at a time, waiting for each tablespoon of water to blend in. The dough should end up looking like this:

Roll out the dough, ensuring it’s wider than the pie dish.

It was difficult to pick up and place in the dish, so I ended up pressing the dough around to try to make it all even. Don’t worry if it doesn’t look that great. Once you’re done with that, pinch the edges to form a new edge. (tip: tuck the dough under along the edge) Then, press the dough into one of your fingers, making the cute zig-zaggy design. Completely professional instructions.

Use any vegetables you have on hand…it made for a great fridge clean-out. I sautéed chopped red bell pepper and onion and added a few fistfuls of spinach at the end.

Add the cooked vegetables to your pie…

Prepare your egg/milk mixture. I used 7 organic cage free eggs and almond milk.

Whisk it all up…

And then pour in your egg/milk mixture, stirring to make sure everything is all mixed in. Add a bit of sea salt just for good measure.

I added a sprinkling of shredded mozzarella on top, but not too much.

Cook for 40-45 minutes. It shouldn’t jiggle when you shake the dish, and it should appear slightly browned on top.

Voila! You’re done! Allow at least 10 minutes to cool, then serve it up! Makes 8 generous slices.

spring time means wedding time

I just got home from yoga, and I was so starving I went straight for the freezer and heated up a frozen Indian meal, broccoli and rice. And the 5 minutes it took to prepare my dinner were too long. I was starving.

That’s right. That Foodie Girl is stooping to frozen food. There is literally not enough time in each day now…and I miss blogging so much!

Anyway, I’ll stop griping and get right to it. To my random images from the past 10 days.

cake tastingThese are mini cakes….from our tasting at our wedding venue. How cute are they!? The cake with the pink pearls is a vanilla cake with vanilla creme and fresh berries. Fondant on the outside. For some reason, I could eat fondant all day–the texture just does it for me. It also helps that it’s pure sugar. Anyone else feel this way too? The rest of the tasting was a lot of fun and a lot of food!

Mom and PopsOk, the composition of this photo wasn’t planned. Does anyone else spot the irony? I had this delicious popsicle on one of my (many) recent trips home to Austin. The lady’s tent at the Farmer’s Market was right next to my Mom’s tent–she’s been showcasing the amazing Tower Garden. Ask me if you’d like to learn how to get one of these amazing grow-your-own gardens! P.S. this popsicle was very tasting and refreshing.

my nameYet another trip home, I went to my little sister Maddy’s high school senior presentation for NCL. It’s kind of crazy that’s she’s graduating! I snapped this shot of my place card because I only have 10 weeks left with this name! How weird is that!?

I apologize for the chaos that is this blog post. I am all over the place in every facet of my life, but I have confidence the craziness will calm down some time. As far as a workout update, I’ve been doing yoga, running and lifting. I hope to get on a more regular schedule and to highlight my “bridal eating plan” in the near future.

To give you an idea of how crazy things are, this week I:

And tomorrow is my bridal shower in Austin! I can’t wait! And with that, I will give you mostly photos and few words. I have to run from work to the next wedding errand. #roughlife

chicken stir fryI have been cooking dinner almost every night with Ryan. It’s a fun time to relax, work together and talk about our days. This dinner was made super easy with a bag of pre-cut, pre-washed produce that we just had to steam. Brown rice was frozen from TJ’s, so just 3 minutes in the microwave!

kitchen aidAnd finally. My new pride and joy. This copper beauty was sent to me this week as a wedding gift from my father’s aunt. I couldn’t thank her enough. Ryan and I agreed it’s like getting a new car. It catches my eye every time I walk by the kitchen. Isn’t it perfect!? Lots more baking to come…

mollydogAnd I leave you with Molly. This picture melts my heart. I opened the door to get in the car and leave my home in Austin to return to Dallas, when little Molly jumped right in and looked at me like she was ready to go! I don’t think my family would have appreciated me stealing this little baby. But I am returning to her tonight! (any dog lovers out there?)

a few of my new favorites

Hi everyone!

Life has been crazy but in a very good way. With my digital strategy business, I get to learn something every single day, even if it’s through a struggle. I make time for yoga and I always make time to fuel my body with what it needs.

Trader Joe’s is nothing new, but since I discovered it only takes me 20 minutes to get to the Plano TJ’s, I am thrilled. Here are a few things I picked up and my thoughts on them.

DSC01680I’ve seen it around the foodie blog world, but never got to try it…until tonight. First I took the wrapper off, then I shook it, then it exploded all over my kitchen. But I did manage to salvage most of the bottle. I stirred it into my brown rice, steamed vegetables and fried egg. Really kicked the meal up a notch. It’s delicious. P.S. the brown rice was from the frozen section. Just had to pop it in the microwave for 3 minutes and BAM. Perfectly fluffy brown rice. Life saving.

DSC01681Again, how can a freezer meal taste so fresh and delicious? Somehow this rice is also fluffy and the sauce is so incredible. Next time I will add tofu. It’s not enough food for a meal. The taste is on point!

My fiance (and my family) and I are big hummus fans. Needless to say, I was excited to try a new salad dressing. I wasn’t very impressed. It was really bland. I like my Cindy’s balsamic a lot better.

bowl and barrel, trader joes, sprinkles cupcakes, oh my

This weekend was a blast. It included most of my favorite things. I will just dive right in and provide mostly images and keep the words to a minimum.

bowl and barrelStarted out at Bowl & Barrel with Ryan and close friends I hadn’t seen in a while. Great food, company and fun bowling. (complete post on this place soon)

5k raceSaturday morning we were up bright and early to run the Form Follows Fitness 5K in downtown Dallas…aka my backyard with over 1,200 others. It was 35 degrees but it was still fun to run with my fiance (for the first 1.5 mi until he sprinted ahead).

FFF 5k medalI ended up winning a medal! 3rd place in my division!! (females age 20-24). Definitely didn’t expect this.

After the race I wanted In-N-Out. That happens once a year. If that. So I decided to satisfy that odd craving with Ryan.

Saturday afternoon was spent shopping at Trader Joe’s. Plano has had one for a while, but this was my first trip to a TJ’s in Texas. My obsession will only heighten. And a complete post will include my favorite new items. Here’s an obvious one:

cookie butterSunday morning we went to a registry event at Crate & Barrel where they shut the store down and only allow engaged couples to shop for their registry. Plus coffee and pastries. Then it was church time, then it was Ryan building this bookcase we got off our registry. Thanks Myrna!

sprinklesThe weekend was rounded out with one of my very best friends (a bridesmaid!) sitting on the couch watching the Oscars, ordering pizza, drinking wine and eating Sprinkles.

A perfect end to a fun-filled weekend.

Add in a night of drinks and apps, getting nails done and catching up on my DVR, and I had a really jam packed weekend now that I look back on it!

engagedYes, I love Valentine’s Day. Yes I am engaged. But I love Valentine’s for a variety of reasons. Here are a few fun things about today so far.

And finally, I love getting physical mail! Snail mail. I got a sweet card from my Dad (pictured) and a Valentine’s Day mug from my mom and a card too. Mugs were the theme this year I guess!

a few friday things

Notice the new header? Big thank you to my twin brother Travis for designing it! The TFG facelift is still in progress, but this new header is a great start, don’t ya think?

I miss blogging.

Hello world. I am still here, and I know I say I’m going to get back into the blogging habit, but life has been full of a few things:

  • running a business
  • planning a wedding (only 4 months to go!)
  • yoga/running

But mostly the top 2 things on the list. I also got food poisoning last week from chicken I cooked…my fiance was feeling it too. It was a full weekend of feeling horrible, but that has passed and even That Foodie Girl gets good poisoning and doesn’t even want to think about food.

Here are a few images I will leave you with for the weekend:

blueberriesA delicious pre-yoga snack. Cold, ripe blueberries.

quinoa and eggsOne of the most delicious combinations of flavor and texture: quinoa cooked in cream of mushroom soup with diced bell pepper and zucchini. Topped with a fried egg and cracked pepper. This. was. incredible.

central market veggiesVeggies all around. Dallas people– this is at the Lover’s Lane location. You can choose as many fresh vegetables as you want and they’ll stir fry it or toss it into a pasta of your choice. I got the stir fry and it was very tasty.

And finally, my sweet baby cousin Pierce. He was looking at himself on my phone.
