Good morning! It’s 8:13am and I’ve already cooked breakfast and eaten it! This is pretty good for me, so let’s make it a productive day!

DSC02116Today’s breakfast was 2 ingredient pancakes: banana and egg. Simple, easy, and it actually worked! This was a Pinterest win.

DSC02117These pancakes were the thickness and texture of a crepe. Sweeter than usual (because of the dominant ingredient, banana), so don’t make these if you don’t enjoy bananas. Top with almond butter, PB or sprinkle with coconut flakes. I topped mine with peanut butter. It was a great salty offset to the sweet cakes.

The recipe to make the amount shown above: (for 1-2 people)

1 banana

2 eggs

(add a pinch of baking powder if you want them to be fluffier)

Mash banana with a fork, ensuring it’s completely smooth. Add 2 eggs and mix thoroughly. Heat pan on medium heat, add batter, but allow pancake to cook through before flipping. Stack it up and enjoy!

As far as my #tfgbridal plan update goes, Sunday was a day of rest and Monday was a brisk 4 mi run (8:30min/mi pace). Today is 1 hour vinyasa yoga. Lots of #tfgbridalplan meals coming your way!

Homemade vegetable quiche

Hey everyone! Hope you all had a great Easter.

Mine was different because I ended up sleeping through the church service I was supposed to go to with my aunt and uncle. Because of my oversleeping mishap, I ended up attending my church by myself. It felt strange, but I’m glad I got to celebrate Easter where I felt was most important. (my fiancé is out of town, too)

After church, I decided it was time to make brunch. Brunch for 1, please. Ok, just to let you know, Easter wasn’t all loneliness. I met up with family later in the afternoon for an Easter get together complete with little babies Easter egg hunting!

This was my very first quiche and I am very proud of it. I loosely followed this recipe, but ended up with my own version.

I used my new KitchenAid mixer (my pride and joy) to make the dough for the pie crust (use a mixer if you have one!).

Be sure to use your paddle, not whisk.

Instead of pastry flour, I used 1/2 cup brown rice flour, 1/2 cup cake flour. I just didn’t have pastry flour on hand and this turned out beautifully.

When blending, be patient. It might look dry, but add tablespoons of cold water one at a time, waiting for each tablespoon of water to blend in. The dough should end up looking like this:

Roll out the dough, ensuring it’s wider than the pie dish.

It was difficult to pick up and place in the dish, so I ended up pressing the dough around to try to make it all even. Don’t worry if it doesn’t look that great. Once you’re done with that, pinch the edges to form a new edge. (tip: tuck the dough under along the edge) Then, press the dough into one of your fingers, making the cute zig-zaggy design. Completely professional instructions.

Use any vegetables you have on hand…it made for a great fridge clean-out. I sautéed chopped red bell pepper and onion and added a few fistfuls of spinach at the end.

Add the cooked vegetables to your pie…

Prepare your egg/milk mixture. I used 7 organic cage free eggs and almond milk.

Whisk it all up…

And then pour in your egg/milk mixture, stirring to make sure everything is all mixed in. Add a bit of sea salt just for good measure.

I added a sprinkling of shredded mozzarella on top, but not too much.

Cook for 40-45 minutes. It shouldn’t jiggle when you shake the dish, and it should appear slightly browned on top.

Voila! You’re done! Allow at least 10 minutes to cool, then serve it up! Makes 8 generous slices.

The Front Room brunch

I finally got to have brunch at The Front Room at my second home (Hotel Lumen) and it was very cozy. We sat in a booth and started out with coffee.

creamerThe creamer was served in this little “milk carton”. How adorable is that? If only every restaurant would follow suit and just spice things up with something fun and different. It makes a difference!

front room breakfast sandwichI had the BLTE (bacon, lettuce, tomato, egg) sandwich. It came without the bacon…I had to ask them to bring me some. So I had half of my BLE until I realized I was missing the B. Sad story. The bread was unexciting and the flavor was not really there. When the bacon came, I realized the bacon was the best part (drenched in maple syrup?) Delicious.

front room pancakesHowever, my little sister ordered their pancakes with cinnamon butter and a side of bacon. These pancakes are so thick and fluffy! These were delicious. I will be back for those.

Overall a nice place to brunch. It was comfortable and it was a place where we could hold a conversation at a normal volume. Something you don’t find too much around Dallas brunch spots.

A hearty breakfast

This morning I woke up sore and starving. Welcome to training day #4.

Enter large first meal. I don’t usually wake up hungry, but this morning I was craving vegetables and protein.

See? There are veggies under there. I sautéed zucchini and orange bell pepper in coconut oil with a bit of sea salt and cracked pepper. 2 fried eggs on top for protein. Side of Seeduction toast (from WF) with a smear of Earth Balance.

Holy moly this red plum was the BEST fruit I’ve had all summer long. WF only had about 5 left and I snagged 3 of those. I don’t think I’ve ever had a red plum before but this thing was perfectly ripe, tart, juicy with a touch of sweetness.

This breakfast was the perfect balance. I could eat it again today.

So back to training. Last night I was very sore. Today is cross training day and I will be going to yoga in place of the elliptical. I hope yoga counts as cross training. It’s going to be a lovely stretch and sweat session.

What do you usually crave first thing in the morning? Sweet or savory? I usually have an internal battle every morning trying to decide what I want.

Lazy Sundays

Happy Lazy Sunday everyone!

Sunday is my favorite day of the week. A day with absolutely no expectations. A day to worship God. A day to sleep in. A day to snuggle with your loved ones (this includes pups!). A day to make waffles and sip on coffee. A day to do nothing. A day to be productive. Whatever your Sunday includes, be sure to soak it up!

Just in case you’re wondering, this Sunday (as in today) I slept in way past breakfast and got to enjoy lunch with my fiance.

This waffle was enjoyed Friday morning right here at my desk. Sometimes making waffles during the week makes your entire day feel special. This waffle was made with a mix plus a scoop of Juice Plus Complete for extra staying power, topped with a dollop of plain Voskos Greek yogurt and sprinkled with chia seeds. Berries on the side. Dab of PB on the side for good measure. This had me full for hours.

Laduree, Sarabeths, Le Bain and more

Good evening everyone! I’m back with another recap of my amazing NYC trip last weekend. I literally ate my way through the city and I have some iPhone photos to prove it.

My Saturday morning began at Sarabeth’s with my freshman roomie, Cameron! It was such a cute little brunch spot–we brunched at their South Central Park location. It was busy but it didn’t take too long to get seated. I had their veggie frittata with a pumpkin muffin and coffee. Filling and tasty.

I loved how we sat next to this little garden area. It really brightened up the damp and humid morning.

Next up was Laduree. Of course!

The store front was enough to melt my heart.

The inside was so cute. At $2.75 per macaron, I decided to get 4 to make the trip up there worth it, right? I got pistachio, salted caramel, coconut and chocolate. Mmmm…

For dinner we headed to the Meatpacking District with a few goals in mind: Biergarten at the Standard and a rooftop bar. We started out at Sea Thai–my prosecco, his Stella. I had pad thai and he had a green curry noodle dish. My pad Thai was too rich and left me feeling a little unsettled.

After dinner, I was dying to walk the high line. I practically stared at it all through dinner. We walked up and down the high line and were happy to see greenery and the Jersey shoreline. We also ran into a few food trucks up there…but I was too full to even think about food (not until 2am did I get my gelato). It was a romantic spot to walk around sunset time.After our walk, we had pint sized beers at the Biergarten at the Standard Hotel and enjoyed the people watching and the overall atmosphere. It was a fun place, but we were ready for a rooftop. We gulped those things down and headed up the elevator to Le Bain.

That would be a hot tub in the club. We were expecting a bar not a club, much less a club with a hot tub! We were shocked, but mostly in awe of the view.

After staring out the windows, we got drinks, sat down on a couch near the hot tub and enjoyed pure people watching entertainment on that Sunday night. Sorry for missing half your face in this photo, Ryan.

Things got wild and we got to be spectators. A hot tub in a club!? Still shocked.

A perfect Saturday morning treat

You know it’s going to be a good weekend when your Saturday morning begins like this. At 11am. Sun is shining, coffee is brewing, and it’s time for waffles and a side of peanut butter of course.

Please excuse the missing bites out of this waffle..I was hungry. I was missing the maple syrup (new apartment…oops!), so I made my own healthier version of a sweet beginning. Waffle + plain Greek yogurt + blueberries + drizzle of honey. Oh and an occasional dip in the PB jar. It was so good and kept me full.

Roly Poly breakfast wraps

It’s too bad I’m just finding out that Roly Poly has a delicious breakfast option, right after I graduated from SMU. Good thing I’ll be sticking around! Meet the breakfast wrap. More commonly accepted as the breakfast taco (if you’re from Texas) or breakfast burrito (if you’re from anywhere else), Roly Poly has a wide range of breakfast options even for vegetarians too.

I got a half of their veggie scramble wrap. Inside the wrap is scrambled eggs, tomato, spinach, a bit of Jack cheese, bell pepper and onion. It was so tasty and the wrap was a little toasted from the grill.

If you’re around SMU or just in Dallas, hurry on over to Roly Poly for a healthy and filling breakfast.

Del Frisco’s Grille brunch

Let’s rewind back to last Saturday. I got the pleasure of attending a Dallas Blogger Brunch at Del Frisco’s Grille. Everything was paid for, just to preface this blog post.

I had been to DFG for brunch before and loved it. This time was no different. When we first arrived we were greeted with jugs of mimosas, two types of sangria and bloody mary’s with all the toppings. To start munching right away, we started with their breakfast pizza.

I’m a huge fan of eggs and pizza, and the combo with added bites of prosciuttos was like heaven after a Friday night. I actually loved this “starter” so much, I know I’ll be back to order just that.

Along with the pizza we enjoyed their red velvet waffles and grilled cheese and tomato soup.

Drinks were refilled after every sip, and “Brunch Punch” was served as well. This little guy was packed with all sorts of tropical flavors, it was like sipping on a vacation. Dangerous but delicious.

As if we were still hungry, we dug into the desserts. Our favorite was the coconut cream pie. The creamy filling was just the right amount of sweet and the crust just crumbles and melts in your mouth. It was the best I had ever tasted and the presentation was right on. Feast your eyes:

If you haven’t tried Del Frisco’s Grille for brunch, do so. Just come really hungry.

Another Broken Egg Cafe: not eggsactly what I was eggspecting

I love eggs. Eggs aren’t that easy to screw up, but not for this place.

First off, I need to give credit to my Dad for coming up with the title of this blog post and his abilities to play with words. No, but really, the title sums up my feelings.

I went in on a Saturday morning, never having been in before but having heard about it. I figured that since it was a chain and because it was incredibly bustling on a Saturday morning, it had to be at least alright.

Can I get some eggs with that hollandaise sauce? I hate to be harsh here, but I actually gag thinking about this dish (veggie benedict). My eggs were drowning and the eggs themselves were extremely runny, they could hardly be considered poached. Underneath the caloric cream sauce was spinach, mushrooms, tomatoes and missing broccoli. I never got my broccoli. The potatoes were ok. 

After my horrible breakfast that upset me for the rest of the day (because I am a food diva), the waiter took about 20 minutes to grab our credit card from us, then another 15-20 to bring it back. Oh, and he brought us someone else’s credit card. It was a mess.

Needless to say, I won’t waste my Saturday brunch here ever again. Anyone else have a similar experience?
