Good afternoon foodies!
It’s been a busy but fun weekend and it’s somehow already 4pm on Monday. I’ve been working hard today from home…staying out of the cool weather because I have caught a cold. Last night’s dinner took a total of 5 minutes to make, and it was perfect for the chilly 50 degree temperatures we were experiencing in Dallas this weekend. (don’t worry, it’s back to 88 later this week)
Remember that canned Elmo soup I bought a few weeks ago? Bet you’re jealous now. It really hit the spot. Filling and only 250 calories for a full bowl.
On the side was half of a honey crisp apple (my favorite) and a piece of Seeduction bread with Earth Balance. The toast/Earth Balance combo is my current obsession…I have it for breakfast, snack, on the side for dinner. It never gets old.
Don’t think I skipped dessert.
I made brown butter oatmeal chocolate chip cookies. They were perfect when they first came out of the oven. Today, I’m not happy with the consistency. A bit tough. Oh, and I adapted the recipe from this pin I found on Pinterest:

TRAINING UPDATE:
Saturday: was supposed to be 4 miles, but I skipped to get myself healthy
Sunday: rest (walked about 3+ miles at the Dallas Arboretum)
Today: supposed to be 4 miles again…skipping until I get back to feeling 100%.
