Happy Tuesday night everyone!
Sometimes I get in a bit of a food rut where I eat the same things over and over… but this week has not been one of those weeks. This past weekend alone I managed to eat at several of my favorite places including Zizikis, Smoke, Company Cafe and others. Last night I went to Tate’s for a cocktail and apps with some friends and the excitement continues.
When I cook at home, I sometimes stick to the same dishes. At least they’re healthy dishes though. The photo above is my favorite breakfast routine. I love to make it when I have time to sit down and eat. I cook steel cut oats in coconut milk over the stove top and then let it sit in the refrigerator overnight. Next step: add in banana slices, a drizzle of honey, chia seeds and a spoonful of almond butter. It’s delicious and includes healthy fats, fiber, protein and much more.
This is a simple salad I like to call the arugula lemon salad. After eating it in Mexico at Lol Ha, I decided it’s so simple and nutritious, I’d throw it together as an appetizer at home. In the mix goes a few handfuls of arugula, squeezed lemon, drizzle of olive oil and a dash of salt and pepper. The nutty tones of the lettuce goes hand in hand with the citrus and cracked pepper. It’s simple and refreshing.
