Froyo, formals, cupcakes and wine

This weekend began with the last formal on Thursday night. The DJ was awesome and we danced the night away. And had one too many beverages. Here’s a snapshot of one instance:

But hey, at least we were drinking the good stuff. Champagne + Stella.

Because of our early start to the weekend, we’ve gotten to fit in quite a few activities to celebrate the end of our college careers. Most of these activities have included food and drink.

We had froyo by the pool. Along with a venti shaken iced tea lemonade. It was a winning combo for a hot day by the pool. P.S. what is up with this 90 degree weather in Dallas in APRIL? I’m feeling it’s going to be a sweltering summer…but when is it not?

On Friday night, one of my very best friends came over and we decided to spend our evening baking. We both love to bake and quickly decided on the chocolate peanut butter filled cupcakes in my Martha Stewart cupcake cookbook. We added a chocolate ganache on top. It was a warm fluffy Reese’s peanut butter cup. So good.

Yesterday, Ryan had a BBQ by the pool. He grilled up burgers and turkey burgers, hot dogs, etc. Oh, and way too many beers were purchased.

Finally, last night dinner was at Oddfellow’s in the Bishop Arts District. I enjoyed a glass of $5 wine..better hurry over there! They are only charging $5 for select wines in order to get rid of some wines so they can release their new wines!

All in all it’s been a great “last weekend”. Tonight my older brother is coming to town and we’re going to the Rangers game!

Whipped banana oatmeal

Good morning foodies!

This morning I got out of bed on time and actually made myself some stovetop oats. I was feeling a bit adventurous, so I made some whipped banana oatmeal á la Kath Eats Real Food. Had I actually read through/watched her video before I made my oats, I probably would have gotten it right. I came close.

I stirred old fashioned whole grain oatmeal with half a banana and a mixture of coconut/almond milk. It’s super creamy and the bananas make you feel like you’re eating dessert. Chia seeds on top for fiber and Omega 3s for essential fats. Healthy & good!

Oh, and remember yesterday I told you I went on a run? Well, I ended up doing almost 2 miles which is the  most I’ve run since before my foot surgery. The weather was perfect and I was feeling good. When I came home I did one of PB Finger’s circuit workouts.

I absolutely love her workouts. If you’ve never been over to her website, do so NOW! She has circuit workouts for at home, treadmill workouts, elliptical..something for everyone. I will say my legs are SO sore from this circuit workout. And I only went through that cycle once.

An easy healthy lunch

Good morning and Happy Tuesday!

As you can see, I finally have some time to do some more blogging and cooking at home! I am done with my internship and I’m in my last week of classes of college. I’ve signed my new apartment lease and I also have the beginnings of a job set out for me. More exciting news on that to come…

For lunch yesterday I wanted a colorful and balanced meal. Isn’t that spinach gorgeous? Am I the only one that gets excited about fresh produce? Under the pile of spinach is a tomato basil Morning Star patty (soy product) and a whole grain English muffin with hummus on one side. Side of baby carrots. It was a perfect lunch that only clocked in at about 300-325 calories, not to mention a serving of veggies, protein and grains. It kept me full and was a good meal for after my workout.

It’s a sunny morning here in Dallas and I’m about to use my MapMyRUN app for the first time, not to mention go for my first actual run post foot surgery. We will see how this goes. Has anyone else used this app?

Monday means time for a green smoothie

Mmmm so green and fresh.

Am I making you want a green smoothie?

Ok, HAPPY MONDAY everyone! The sun is shining here and I’m feeling an awesome week. And there’s no better way to start your week off than in a healthy and fun way. Yep, I’m talking about you Mr. Green Smoothie. Ryan had been complaining about how sweet the green smoothies have been so I decided to change things up which resulted in a very creamy almost ice cream like drink this morning.

Into the blender went:

1 frozen banana

2 handfuls fresh spinach

1 scoop Juice Plus Complete (plant based protein)

1 cup(ish) almond/coconut milk mix

I love starting my day off with 2 servings of vegetables. You just set yourself up for a healthy day. Just a fair warning: this smoothie is still extremely sweet.

Speaking of vegetables, last night I had a fun time photographing these gorgeous sweet potatoes and brussels sprouts.

Please excuse the dusty table…I just love that spot because of the pretty lighting. Last night for dinner I roasted up the brussels sprouts and sweet potatoes and grilled some turkey burgers stuffed with diced onion and garlic.

And as far as this weekend, there was far too much eating involved. I’ll give you a sneak peek to the next post:

Another Broken Egg Cafe: not eggsactly what I was eggspecting

I love eggs. Eggs aren’t that easy to screw up, but not for this place.

First off, I need to give credit to my Dad for coming up with the title of this blog post and his abilities to play with words. No, but really, the title sums up my feelings.

I went in on a Saturday morning, never having been in before but having heard about it. I figured that since it was a chain and because it was incredibly bustling on a Saturday morning, it had to be at least alright.

Can I get some eggs with that hollandaise sauce? I hate to be harsh here, but I actually gag thinking about this dish (veggie benedict). My eggs were drowning and the eggs themselves were extremely runny, they could hardly be considered poached. Underneath the caloric cream sauce was spinach, mushrooms, tomatoes and missing broccoli. I never got my broccoli. The potatoes were ok. 

After my horrible breakfast that upset me for the rest of the day (because I am a food diva), the waiter took about 20 minutes to grab our credit card from us, then another 15-20 to bring it back. Oh, and he brought us someone else’s credit card. It was a mess.

Needless to say, I won’t waste my Saturday brunch here ever again. Anyone else have a similar experience?

Tate’s: mouth watering cocktails and good apps

This crappy iPhone photo doesn’t do the BlackBird Julep justice. Loaded with berries and (yes there’s some alcohol in there) Chambord, Smirnoff citrus, lemon, simple syrup, this cocktail is one of my favorite fruity drinks in Dallas (#1 goes to Bubbles & Berries at Ocean Prime). It’s one of those drinks that tastes so good you don’t even realize you’re drinking alcohol…which can quickly become a problem. Coming in at $10, it’s sort of small for the price, but a decent price for such a pretty drink–a strong one at that.

Tate’s is fairly new to McKinney Avenue, but fits right in with its open air patio in the front. Although it’s kind of loud due to the trolleys and traffic, it’s got a good city vibe to it and the cocktails will make you forget the noise.

I was really impressed with this “bar food”. They included lots of Dallas area appetizer favorites–hummus and bruschetta being the ones we ordered. The original hummus on the right was the best. The one on the left was kind of watery. We stuck to the original. The pita bread was good, and it was nice to get some vegetables in…at a bar!

Next up we had their tomato bruschetta. Nothing too crazy or out of the ordinary here, but the simplicity worked in Tate’s favor.

If you haven’t made it over to Tate’s yet, I’d say give it a try. Go with a cocktail. It’s what they do best.

Delicious and nutritious dinner idea

Juice Plus NMD

Happy Sunday everyone!

First of all, life has been a whirl. My brain has been all over the place and I actually went to Phoenix for about 18 hours in order to stand up there on the stage to support my awesome mother. She made it to National Marketing Director for Juice Plus, the highest position you can achieve. She’s worked at it for 6 years and she truly deserves it. She made a speech to over 5,000 people and rocked it. If you want more info on how to become a distributor for Juice Plus or just want to know what JP+ is, click here. And now for the food:

Drooling yet? It was so good. And 2 servings of vegetables to boot. This afternoon was a lovely day to stay in and cook. Ryan cooked our burgers–extra lean turkey with rosemary & garlic for me, ground beef for him. On the side are sweet potato fries (let me know if you want the recipe) and halved brussels sprouts roasted in the oven with coconut oil, sea salt and pepper. The brussels sprouts tasted heavenly with the hint of coconut. You must try it. (p.s. did anyone else know you spell brussels sprouts like that? Is it just me or did anyone else think Brussels was singular?)

Hope everyone else is enjoying their Sunday and has a lovely week. One thing I learned by zipping over to Phoenix was traveling to a different city is so invigorating. Wish I had the time and money to head to a new city every weekend. Maybe one day.

As far as food goes, I wanted to share a snapshot of our dinner last night. Because Ryan has been sick, nothing sounded better than some homemade soup. It was much easier to make than I thought.

Looks like a little mug, but it was a lot of soup. In the pot went low sodium chicken broth, carrots, zucchini, squash, scallions, fresh dill, fresh squeezed lemon, chicken, pasta and a dash of salt. It was DELICIOUS. Enjoyed with a side of freshly baked ciabatta bread.

The day has come! I couldn’t be more excited about my first full year of blogging for That Foodie Girl. It has brought me so much joy–from my supportive family and friends reluctantly snapping photos of their meals at restaurants for me to people I have met online in the foodie community to getting connected to other people I wouldn’t have otherwise met. It’s been a blessing. All the food blogging I do is truly worth it when someone tells me they read my blog, when someone comments, or when someone texts me to ask me where they should eat. So thank you all for being readers and for growing That Foodie Girl in just one year.

Heading home to Austin for Easter

It’s Friday! And I’m heading south on IH-35 to Austin, Texas. I’ll get to be home for Easter with my entire family–my brothers included. I hope everyone has a lovely Easter if you celebrate it and a great weekend.
